  14. 2 foot longs French bread
  15. 4 cheese slices, diagonally cut into halves
  16. 1 cup shredded iceberg lettuce
  17. 2-4 tomato slices
  18. 2-4 cucumber slices
  19. 1 cup thinly sliced onions
  20. 1 cup thinly sliced capsicum
  21. 4 tbsp sliced jalapenos
  22. 4 tbsp sliced black olives
  23. to taste salt and
  24. 1/2 cup mayonnaise

Instructions to make to make Spaghetti

  1. Heat olive oil in a medium pot over medium heat. Add onion and mushrooms and saute for 5-7 minutes, until tender and the liquid from the mushrooms has been mostly cooked off.
  2. Add garlic and season with salt, pepper and saute another 30 seconds. Increase heat to high then add canned tomatoes and vegetable broth. Bring to a boil.
  3. Add spaghetti noodles and stir until they wilt and fit in the pot. Cover the pot, reduce heat to medium-low and cook for 5 minutes. Remove lid and add chopped bell peppers.
  4. Remove from heat and let spaghetti sit, covered, for a few minutes Stir in Parmesan cheese, taste and adjust seasonings. Serve with fresh basil or parsley and extra Parmesan cheese, if desired.
  5. For subway sandwich Place a french bread on a clean, dry surface and cut it from the centre, so as to make 2 bread halves of 6” each.
  6. Slit each bread horizontally using a sharp knife.
  7. Place all the 4 breads on a clean dry surface with both the sides open. Place 2 cheese slice halves on the upper side of each bread.
  8. Place all the breads on a baking tray and bake in a pre-heated oven for 10 minutes. Keep aside. Place one toasted bread on a clean, dry surface and arrange ¼ cup of lettuce evenly over the lower half of the toasted bread.
  9. Place 6 tomato slices, 6 cucumber slices, ¼ cup of onions, ¼ cup of capsicum, 1 tbsp jalapenos, and 1 tbsp black olives over it and sprinkle a little salt and pepper evenly over it.
  10. Sandwich it with the upper side of the toasted french bread and press it lightly.
  11. Serve immediately.
